Triple layer lemon curd cream cake....Yum!


So today i decided it would be nice to make my family a little "Pre-Easter" cake. Every year i tend to make a really light lemon cake for Easter and this year I used Mich Turners luscious lemon cake recipe from her latest book "Mich Turners Cake Master Class." The Book is fantastic and i highly recommend it to every single cake enthusiast out there! The cake worked out fantastic and tastes sooooooo beautiful! Here's a really good tip from Mich's book: "as soon as the cake comes out the oven, poke lots of holes in it all the way to the bottom with a skewer, then pour the juice of 2 lemons mixed with granulated sugar over the cake and leave until it is dry. This creates the most moist and zesty lemon cake you will EVER taste!

A Me To You Engagement...




Today, i finished a very cute indeed engagement cake. The bride to be loves the famous Me to You bears and so i created two little cute bears, one proposing to the other, and then covered the cake in the tatty teddy patches for that extra cuteness! I absolutely love this cake! Also, the cake is raspberry ripple with a vanilla bean filling, yum!

My Baking Bible...


If any of you are like me, you'll have piles and piles of cook books, baking books and cake decorating books, many of which you probably haven't read in a long long time. But there's all ways that one book that can fix any dilemma you have, and mine is the one and only Hummingbird Bakery book. This book to me is pure genius! I have worked my way through practically every recipe in that book and i cannot say that i haven't been pleased with the outcome, this book is just fantastic!!! Their Brooklyn blackout cake is a MUST for chocolate lovers, and their brownies have kept my college friends buzzing for weeks on end and begging for more! From spinach muffins to new york cheesecakes, this book is a bakers MUST HAVE! And i'm going to give it a "Tammy's 5 star seal of approval!"
They also have a new cookbook coming out this year called "cake days" so be sure to grab yourself a copy, i cannot wait to get my hands on one!

An exciting appearance!!


Finally, after months and months of waiting, my pictures and a short story have been published in April's issue of "Cake Craft & Decoration" magazine! I couldn't be more happy! I emailed the editor months ago and today I bought the copy that featured my work! This could be the start of something great! I've all ways read "Cake Craft & Decoration" magazine and i noticed that it's all ways much older ladies who are in the magazine showing how to create different cakes, so I would love to be featured again in the magazine only this time actually teaching how to create one of MY cakes! Crazy? Maybe!

Happy Birthday To Me...


So last week I turned 17! Finally! My older sister's birthday unfortunately falls two days before mine, and the last few years she has demanded I make her a unique and outrageous cake. Because of this, I've never made myself a birthday cake...ever. Until this year! I put my foot down and finally told my sister "no!" when she pestered me for another cake! My good friend Amy also has the same birthday as me so this year, I made a joint birthday cake for the both of us and she threw a little party. It was the best birthday ever!

But don't you worry, my sister wasn't left out! I wrote instructions down for my mum and left the cake making up to her (she's not exactly experienced in the kitchen) and it turned out to be one really tasty cake! Hehe!

Have I gone crazy?!

Lent starts tomorrow and since I like a challenge, I'm giving up cake and anything with the word "cake" in it's name!! However, of course I will carry on baking and creating cakes for all my clients. I also like to taste all of the cakes i make for customers by trying some of the left over cake that has been carved off, and since I'm giving up cake, I have hired my dad as chief cake taster! What are you giving up?

Cookie dough brownies!


The name says it all, cookie dough brownies! I made a batch of these babies this week and they could not have been any more successful! I first came across cookie dough brownies on TV, it wasnt a cooking show, it was actually just a silly sitcom and I noticed in the background that the father on the show was sloshing cookie dough into a tray of brownie batter! So, being the creative fool that i am, i whipped up a batch of my brownie recipe along with a batch of my favourite chocolate chip fudgey cookies and put them both together in a pan, and hey presto, i had the most gooey, unbelievably mouth watering, crispy on the top cookie dough brownies! And here is my recipe:
For the brownies:
-200g dark chocolate broken up
-175g unsalted butter
-325g caster sugar
-130g plain flour
-3 eggs
Method:
-Melt the chocolate and butter in a pan over low heat until smooth.
-Remove from heat and add the suagr, mix well.
-Add the flour and mix until smooth
-Stir in the eggs and mix well.
-Spoon the mixture into a greased and lined baking tray.
For the cookie dough:
-110g unsalted butter
-100g caster sugar
-100g soft light brown sugar
-1 egg
-1/2 teaspoon vanila extract
-170g plain flour
-1 1/2 teaspoon of bicarbonate of soda
-1/4 teaspoon of salt
-75g chocolate chips
-50g chopped vanila fudge (optional but amazingly tastey!)
Method:
-Mix the butter and sugars in a freestanding mixer untill light and fluffy.
-Add the eggs and vanila and mix well on a slow speed.
-Add all the dry ingredients (flour, salt bicarb) and mix well on medium speed until dough is formed.
-Spoon tablespoon size lumps randomly into the brownie batter so that a fair amount (about 3/4) of the surface is covered.
-Bake ion the oven at 170c (325f) gas 3 for 40 minutes until the cookie dough is golden and the brownies are flaky.
The mixture will be very gooey at first but leave to cool completeley before cutting and serving. (i suggest over night)
